Vetra is led by chef Matthew Accarrino and centers on Italian live-fire cooking, a style that suits the valley's produce and its evenings equally well. The plans call for an Italian grazing table at breakfast and a dinner-party style dinner service beneath nearly 20-foot ceilings, with views over Laird Estate. It is an ambitious brief for a 50-room resort, and the live-fire focus gives it a clear identity from day one.
The wine program
The wine program launches with a signature partnership with BRION and B. Wise Vineyards, their first hotel collaboration in wine country, alongside Caymus Vineyards and neighboring Laird Family Estate. The announced format includes by-the-glass pours, reserve bottles, curated flights, and guided daily tastings. That is a program that reads less like a hotel wine list and more like a tasting room with rooms attached, and the BRION and B. Wise partnership gives the resort a genuine wine country credential that most hotel openings have to build over years.
The amenities
Beyond the dining and the wine, the plans include a heated vineyard pool, a Thermal Garden hydrotherapy recovery circuit, a fitness studio, and a bike barn with a dedicated cycling program, alongside a restaurant, bar, and café.
